Pork and Rice
36oz of pork loin
5c of rice
4 large onions
12c of Water
Large Pot with Lid (12 qt recommended)
Large Roasting Dish
Bring water to a boil, add rice, place on very low heat and cover with lid. Let sit undisturbed for about 15 minutes. Drain water.
Cube pork loin and dice onion. Melt fat in roasting pan, add pork and cook thoroughly, set pork aside. Brown onion with the remaining grease.
Season pork to taste
Serve side by side or pork and onion on top of rice
